Did you know that freeze drying can take up to 7 days to complete?

This slow, gentle process allows up to 99% of the frozen water within the fruits to escape as a gas under pressure.

The shelf life/preservation of the fruit is extended using this process and it is scientifically proven that the nutrition is maintained at at least 95% as well as 100% of the fibre within the fruit. This means that it is similar to the nutritional value of the original fresh fruit when freeze dried compared to only 50-60% of dehydrated fruit which feels and looks like leather.

The best way to keep freeze dried NATIF fruit, once opened is in an air tight, sealed container, in the fridge. You can get over a years shelf life, retaining all the nutrients and flavour this way.

Freeze dried fruit is light weight, crisp and crunchy with a concentrated flavour from the original fresh fruit. The shape and colour is also better retained using freeze drying because there is less heat used compared to dehydrated fruit.

If your NATIF fruit does absorb some atmospheric moisture it can loose its crunchiness but it is still great to use. So don't worry if it softens. This is normal. Its also ok if the powder clumps together. Just break it up with a spoon. Its no problem and still good.
