Wattleseeds are highly nutritious and versatile to use.
It has been a staple food for Indigenous people for thousands of years as a rich source of protein, fibre and carbohydrate and used to make cakes and damper.
Wattleseed has a hazelnut, chocolate and coffee taste and aroma, it can be used as a non-caffein substitute for coffee. Wattle lattes taste great, but don’t throw away the nutritious seeds as they can be reused in baking or cooking.

In a coffee plunger, Brew 5-10g of NATIF Wattleseed Grind into 1 cup of boiling water, wait 5 minutes, strain, then add your favourite frothed milk or serve as a long black.
Alternatively add 1 cup of milk to a saucepan with 5-10g of Wattleseeds, simmer for 1 minute then let stand for 3 minutes, strain into a coffee cup and add some local honey. As an option add a sprinkle of chocolate or cinnamon on top.
For desserts soak the Wattleseeds in a small amount of hot water (just enough to cover) for a few minutes for a less crunchy texture when adding to other recipes.
Can be added to healthy deserts, tarts and baking.
Use to thicken soups and sauces.
Use the brew to make thick shakes, cocktails, sodas and smoothies.
You can even use the seeds as a facial and body exfoliant !

The Strawberry Gum (also known as Forestberry)is a Eucalyptus tree growing in the Northern Tablelands of NSW in Eastern Australia. The essential oils in the leaves give it the strawberry lolly aroma.
Peppermint Gum Tea
The Peppermint Gum grows in the woodlands and forests of South Eastern Australia. The essential oils in the leaves smell like Peppermint and Eucalyptus gum and tastes slightly minty.
Use the milled spice to flavour deserts, fruit dishes and tarts, add to marinades, baking, sauces, teas and other beverages.

Aniseed Myrtle is a rainforest tree growing in some areas of North Eastern NSW Australia. The leaves are crushed releasing an aniseed (or liquorice) aroma.
Can be used in: marinades and rubs for meat and vegetarian dishes, seafood, raw food dishes, salads, soups, pasta, stews and salad dressings or just as you would any other herb or spice.
Add to jams, pizza, syrups, teas, pickles, sweets, butters, cakes, sauces and icecreams/icypoles. Makes great tea too.

This Rivermint is grown by Domonic at Pundi Produce. An Indigenous owned business that is focused on growing native food produce and helping to provide employment for young people in his community. Domonic has a strong connection to his culture and to the land and he uses sustainable farming practices.

Rivermint is a wonderful refreshing and cleansing tea, tasting similar to spearmint. Just add to a cup of boiling water and steep for a few minutes, then drink. You can also make an iced tea and add some citrus segments or some native fruit garnishes.
