Wattleseed (victoriae) has a hazelnut, chocolate and coffee taste and aroma, it can be used to make a decaf Wattle Latte.
To make a Wattle Latte
1. In a cup, milk jug or coffee plunger add 2-3 teaspoons of wattleseed grind and 1/4 cup of boiling water.
2. Brew for 3 minutes then strain. Option - Add a drop of local honey to sweeten.
3. Add your favourite frothed milk to make a Wattle Latte.
Cafes and Baristas - Make just like a Chai Latte with honey, strain and sprinkle Wattleseed on top.

Grown in plantations in northern Australia without the use of chemicals or pesticides. Wild Rosella can be found in tropical and sub tropical areas of the east coast of Australia.
A new naturalised Australian wild plant has been here for around a thousand years and thought to have been bought over from Indonesia.
The whole plant is edible and the young leaves are great in salads.
The calyx is the hero part of the plant after flowering. It grows into a fruit like calyx which has a Tart, raspberry flavour which can be used in sweet and savoury dishes as well as in beverages.
Tastes similar to Rhubarb and Raspberry. Makes an amazing Tea and colours the water red with its pigments.

Cinnamon Myrtle is found in Sub-Tropical areas of NSW and Queensland. The leaves have a spicy mild cinnamon flavour and aroma. The leaves have elemicin (an essential oil) which is also found in nutmeg.

Savoury dishes - Curries, Moroccan dishes, stews, slow-cooking, chutneys, jams and sauces, rice and pasta.
Desserts - baking, raw-food cakes, home-made chocolates, jams.
