Strawberry Gum and Quandong Drizzle Cake
Makes 8 mini loaf cakes
300g Plain Flour
250g Caster Sugar
250ml Vegan Milk
125ml Sunflower Oil
3 Tsp Strawberry Gum
2 Tsp ‘No Egg’ egg replacement
1 1/2 Tsp Baking Power
1 Tsp Baking Soda
1 Tsp Vanilla Extract
1 Tsp Apple Coder Vinegar
1/4 Tsp Salt
100g Icing Sugar
1 Tsp Quandong powder
Muntries to garnish
-Preheat oven to 160 celsius fan-forced and grease your baking pans.
-In a bowl, whisk together all of the wet ingredients and set aside.
-In a large mixing bowl, sift together all of the dry ingredients.
-Add the wet ingredients into the dry and stir together until just combined.
-Add the mixture to the pan until 2/3 full.
-Bake for 32 minutes.
-Once the cakes have cooled down, in a small bowl mix together all of the icing ingredients and drizzle over the cakes.
