Strawberry Gum

(Eucalyptus olida)

The Strawberry Gum (also known as Forest berry)is a Eucalyptus tree growing in the Northern Tablelands of NSW in Eastern Australia. The essential oils in the leaves give it the strawberry lolly aroma.

Strawberry Gum contains methyl cinnamate which gives it the strong strawberry aroma and flavour. Used traditionally by Indigenous people for digestive complaints.

Smells of strawberry and eucalyptus.
Use to flavour deserts, fruit dishes and tarts, add to whipped creams, raw deserts, ice-cream, baking, sauces, jams, pavlova, creamy desserts, parfaits, sauces, tea and other drinks like juices and smoothies.
Can be used with salt in savoury dishes to enhance flavours.
As a TEA: 1 tsp in boiling water for up to 3 mins then strain.
