Wattleseed Chocolate Banana, Nuts & Seeded Loaf
This Banana loaf is full of nourishing goodness.
INGREDIENTS
1 cup of Almond Meal
1 cup of NATIF Wattleseed Flour
1 tsp of Baking powder
4 fully ripe medium sized bananas
1 beaten egg
1 block of melted Dark Chocolate
1 tsp of Vanilla essence
1/4 tsp of NATIF Davidson Plum Pink Salt
1/4 cup of Pumpkin seeds
1/2 cup of Walnuts
1/4 cup of NATIF Wattleseed
1/4 cup of pitted dates
1 tub (160g) of Greek yoghurt
METHOD
- Line a baking tin with greaseproof paper and preheat the oven to 170 degrees C.
- In a large bowl add the Wattleseed flour, baking powder, Davidson plum salt, and almond meal and blend
- Stir in the pumpkin seeds, walnuts, dates and Wattleseed
- Squash the bananas and stir in the yoghurt Vanilla essence and the beaten egg
- Melt the dark chocolate in the microwave and don't overheat
- Add the wet ingredients to the dry ingredients and blend.
- Gently fold in the melted chocolate in swirls and don't over mix
- Add the mixture to the baking tin
- Cook in the oven for about 50 minutes or until cooked in the centre
- Allow to cool in the tin then turn out onto a baking rack to cool further
